L'equilibrio (Balance) is the chief inspiration behind the philosophy of 'padovana' cuisine: it shuns violent contrasts and favours the harmonious marriage of individual flavours, without denying its peasant roots. The recipes from Padovas 'recipe book' come from the garden, the farm, the vine and the traditional insaccati; the book has roots which go back to the period of the Obizzi, Carraresi and Contarini families.
